Kwati (Sprouted 9 Beans soup)

K wati is a traditional Newari dish, known for its unique combination of nine different sprouted beans. These beans include red kidney beans, black-eyed peas, black gram, chickpeas, cowpeas, field beans, green beans, mung beans, soybeans, and white beans. The soup made from these sprouted beans is a popular delicacy, especially during the festival of Guni Punhi, which occurs on the full moon day of Gunlā, the tenth month in the Nepal Era lunar calendar. Kwāti is also referred to as "gedagudi"  in the Mithila region of Nepal, highlighting its significance in the broader cultural context of Nepal. This soup is not only consumed for its rich taste but also for its health benefits, especially for its high protein content due to the diverse range of beans used. This refreshing salad is made with boiled potatoes, yogurt, onions, coriander, and a blend of spices. It is commonly served as a side dish, accompanying foods like roti , sel roti , steamed rice , or batuk . The combination of creamy yogurt, tender potatoes, and aromatic spices creates a flavorful and satisfying dish enjoyed in many Nepali meals. I still remember the first time I tried Chukauni,  it was at my cousin’s house. I was a bit hesitant at first, but after some encouragement from my aunt, I finally gave it a taste. Maseura ko Tarkari (Maseura Curry) is a traditional Nepali dish made from maseura, which are fermented and sun-dried vegetable balls made from a combination of minced vegetables, colocasia leaf and black lentils. The dried balls are stored at ambient conditions, can be store up to a year or more. This hearty dish is a winter staple in my home. The most popular pairings for this dish are pindalu (taro) or potatoes, which complement the flavors perfectly. From elders to young ones everyone loves this dish. It  has a distinct, mildly fermented taste that carries a subtle tang, almost like a light sourness, but it's not overpowering.
